An éclair is one of the few pastries where the dough rises without yeast or baking powder. The flour is cooked in a hot mixture of water and butter, eggs are added, and in the oven, the moisture turns into steam and puffs up the dough from the inside. A cavity forms inside, which is then filled with cream.
That’s why the éclair shell is almost unsweetened and very light: the cream provides the flavor, while the dough gives it texture.
Classic with pastry cream, chocolate, and coconut. The classic is the most delicate; the chocolate is richer with a slight hint of cocoa bitterness; and the coconut has a tropical aroma and is the heaviest.
